Start by juicing your lemons – you’ll want to roll them firmly on the counter first to help release more juice. Strain out any seeds as you go.
Add watermelon chunks to a blender. Don’t pack them in too tightly – you want to give them room to move around. Blend until completely smooth, about 30-45 seconds.
Pour the watermelon puree through a fine-mesh strainer into a large pitcher, using the back of a spoon to press gently and get all the juice out.
Take mint leaves and gently clap them between your palms once or twice – this releases the oils without making them bitter. Drop them into the pitcher.
Add honey or sugar and stir until completely dissolved. If using honey, you might want to mix it with a small amount of warm water first to help it blend easier.
Pour in the lemon juice and cold water. Give everything a good stir for about 30 seconds – you want to make sure the mint has a chance to release its flavor.
Let it sit in the fridge for at least 30 minutes. The longer it sits (up to about 2 hours), the more minty it’ll become.
