Ingredients

  • cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ cup granulated sugar
  • ½ cup light brown sugar packed
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • cups semi-sweet chocolate chips
  • ¼ cup coarse sugar for topping optional

Instructions

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners and lightly spray the top.
  • Whisk flour, baking powder, and salt in a bowl for 30 seconds to combine evenly.
  • In another bowl, mix both sugars, breaking up any brown sugar lumps.
  • Whisk in eggs until the mixture lightens, then add milk, oil, and vanilla, mixing well.
  • Make a well in the dry ingredients, pour in the wet mixture, and fold gently with a spatula until just combined—lumpy batter is fine.
  • Fold in chocolate chips with 3-4 strokes.
  • Fill muffin cups ¾ full and sprinkle coarse sugar if you are using it.
  • Bake for 18-22 minutes until golden brown and a toothpick inserted between chocolate chips comes out clean.
  • Let cool for 5 minutes, then transfer to a rack. Wait 15 minutes before eating to avoid burning yourself on melted chocolate.
