- 2½ cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- ½ cup granulated sugar
- ½ cup light brown sugar packed
- 2 large eggs
- 1 cup milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1½ cups semi-sweet chocolate chips
- ¼ cup coarse sugar for topping optional
Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners and lightly spray the top.
Whisk flour, baking powder, and salt in a bowl for 30 seconds to combine evenly.
In another bowl, mix both sugars, breaking up any brown sugar lumps.
Whisk in eggs until the mixture lightens, then add milk, oil, and vanilla, mixing well.
Make a well in the dry ingredients, pour in the wet mixture, and fold gently with a spatula until just combined—lumpy batter is fine.
Fold in chocolate chips with 3-4 strokes.
Fill muffin cups ¾ full and sprinkle coarse sugar if you are using it.
Bake for 18-22 minutes until golden brown and a toothpick inserted between chocolate chips comes out clean.
Let cool for 5 minutes, then transfer to a rack. Wait 15 minutes before eating to avoid burning yourself on melted chocolate.
